My reasons for moving mail off my own server are:

Bandwidth: 90% of the incoming bytes on port 25 are spam even though
90% of the connections get dropped at the HELO because of RBLs.

Spam: Most of the 10% that gets past the RBLs and land in valid mail
boxes are SPAM. I'm getting tired of updating Spam Assassin and the
RBLs every time something new comes out.

Search: Gmail's search is awesome. I have found nothing that can
search IMAP as fast or as well.

Convenience: I have a common interface for all my mail accounts
(except work). I can access it all through any browser, including the
crap browser on a cheap cell phone. Gmail also has a cool midlet that
runs on most Java enabled phones that works very well.

Security: I no longer need to worry about smtp, imap, or pop
exploits. I don't have to worry about becoming an open relay, and I
reduce the load on my web server.

The security reason isn't complete yet, but it's getting close. I
still have about 20 domains that are handled by postfix and dbmail but
am slowly moving them to gmail for domains.

I'm finding that it's a whole lot more fun to use good tools than it
is to administer and maintain them. That's the reason I use Gmail and
Flickr instead of Squirrel Mail and Gallery. Let someone else worry
about how to handle my Gig+ of email and nearly 10k photos.
